Canon ImageRunner (3200-C1) Booklet Printing

I am printing a booklet (InDesign) from Mac (Tiger/Leopard) to Canon ImageRunner 3200 with SaddleStitch. I have been instructed NOT to "Print Booklet" form InDesign print settings, but to use the PRINTER function and the Canon Driver to specify Stitch, Staple and Booklet. (My doc is a 24 page letter sized book that needs to print to 11x17, double sided - 6 physical sheets)

I can set everything BUT BOOKLET that will print two-sided. I have tried every setting arrangement I can find without having the BOOKLET option available. The BOOKLET ON setting is grayed out and I can not figure out how to turn it on.

Can anyone help with this issue? Have I been given good advice? If so, what setting am I missing?
