Coated vs. Uncoated color shift?

What actually causes the color shift (blue changes from green-blue to purple-blue for example) when changing from coated to uncoated stock? Can someone explain the printing concept that accounts for the difference between US coated v2 and US uncoated v2 color profiles?
 
Different ink absorption (or lack thereof) combined (to a lesser extent) with order colors are applied?
 
    • Which color profiles?

    If you are changing the profile in your computer, that shows you the color which will be printed in Coated or Uncoated paper.
    Anyway, if printed in paper, different Process Calibration is used for each.
