How can I make hp DJ800 use black cartridge only?

Hi all,
so this is the story; I'm trying to make the hp DesignJet 800ps use black cartridge only since we're going to use it for black and white.
The plotter is on a network that 200 users can use it, so I want it to kinda force it to only print black & white,
and I also have another question, does anyone know if it's possible to set up an admin password on this plotter? so no one else can change the settings on it.

Is the print driver installed on each user's workstation? Unsure if you can override the pure black / grayscale only or color option set in the print driver from the printer control panel itself.

yes the printer's driver is installed on each of the workstations, there are 30 of them, but there are 200 students using these 30 workstations.
I found an option on the plotter menu (on the actual plotter, not on the properties), letting me choose color/grayscale/true black. I think if I choose true black it's going to use black cartridge only, but it still needs the color cartridges in when I want to print, and I'm afraid if I just leave it like this students will change the setting and print on color.
