The default as far as I know is to show Total (Color and Black and White) and then Total Black and White so it's trivial to get the color by subtraction. There are a multitude of separate counters that you can set in service mode for any of the 6 user-displayed values when you hit the counter check button.

(usual caution applies - enter service mode at your own risk if permitted, be careful and don't hit anything that you don't know exactly what it does or you may ruin your machine)
Go to Service Mode (* 2 8 (at the same time) *) click on Copier, Options, User and you can then set counters 1 to 6 which display when you click the counter check button.

Total 1
Total 2
Total large
Total small
Total Full color 1
Total Full color 2
Total black and white 1
Total black and white 2
Total monocolor/large
Total monocolor/small
Total black and white/large
Total black and white/small
Total 1 (two sided)
Total 2 (two sided)
Large (two sided)'
Small (two sided)
Total (monocolor 1)
Total (monocolor 2)
Total (full color/large)
Total (full color/small)
Total (full color + monocolor/large)
Total (full color + monocolor/small)
Copies (total 1)
Copies (total 2)
Copy (full color + single color/large)
Copy (full color + single color/small)
Print (full color + single color/large)
Print (full color + single color/small)
etc.
